I know this is an old thread, perhaps the original poster is no longer monitoring, since no reply was received. However, just in case...
First thing to understand about the EWI4000S synthesizer is that it is an analog emulation synth, which means the sounds will never sound like an acoustic instrument (for that, you need a sampler, or a physical modeling synth). That having been said, you can produce very pleasant and expressive flute-like sounds out of the instrument, but it just won't emulate a real flute.
If you have the stock factory patch set, Patch #4 (Wood Wind) is a decent flute-like sound. You can start from this, and use the Vyzex editor to tweak it to suit your taste. You can also try #15 Recorder patch as a starting point for a variation.
If you have the popular Patchman set of patches, there are three: #6 - Flute, #8 - Recorder and #16 EWI Flutish, which all will be good starting points for you.
Vyzex is very easy to use, and you can tweak so many knobs in it. Some combination is bound to satisfy you! Good luck.
